Your guacamole principles ring true to my own: if it doesn't taste mainly of avocado, it ain't guac. Also, sour cream is verboten. I essentially follow the same procedure as you. To bring out the avocado flavor, I like to use a little of each of the following spices: salt, paprika, cayenne, chili powder. Sometimes I add a little honey too. The chili powder might sound a little strange, but works quite well. I've gotten compliments on this guacamole at every party I've brought it to.
