[Recipe] Savory Ham and Potato Soup

With the overblown failure of an overspicy glazed ham on Christmas, I found myself with an overabundance of leftover and somewhat too spicy ham. I put out a request for soup suggestions to use it in, and got more than a few suggestions for ham and potato soup. A little bit of Google-fu later, I had a printed out recipe. This sounds absolutely delicious. Sadly, I'll never get Russ to make it now that we're avoiding potatoes. :-(

No dumplings, no spuds, damn! Where've all the starch and carbs in your diet gone? ; )

Well, I've never been fond of dumplings -- too heavy and sticky. If I'm going to put bread in my soup or stew, I want it baked first! Pasta, being designed for cooking in liquid, makes a better alternative IMO.

Starches and sugars have largely been a casualty of our change of eating habits. I still eat some (I'm about to go eat a toasted asiago bagel with cream cheese for lunch), but things like potato soup are now relegated to the level of "occasional treat or side dish", not main courses. The tradeoff in health improvements* is worth it to me. And I only gained 2 pounds over the holidays rather than 10, while still eating enough of the delicious desserts not to feel deprived.

* As in: (1) my ankles don't swell up on long road trips any more; (2) I almost never wake up in the middle of the night with acid stomach, which had been a several-times-weekly occurrence; (3) according to Russ, my sleep apnea is gone and my snoring much reduced.
