[Recipe] Perfect Roast Chicken and Sweet Rice.

Late last week, I came across an Emeril recipe for roast chicken. Up until then, I'd never actually gotten a whole chicken at the market and prepared it for a meal. This, clearly, needed to change! That sweet rice sounds interesting, although neither of us likes caraway so we'd have to sub something else. Coriander might work well, and would give more of an Indian slant to the flavor.

Cooked rice freezes well in single-serving portions, and can be reheated in the microwave. That's a good way to keep leftovers from going stale before you can finish them.

Freezes, or just refrigerates? Up until now, I've been putting leftover rice in an airtight container and stashing it in my refrigerator. It keeps for a reasonable span of time, but eventually gets less pliable and more... crunchy, I suppose?

Coriander, hmmmm. That could also be tasty -- maybe with a small bit of cumin for heat? What else might you put in for an Indian-esque version?

Yes, freezes, and keeps for quite a while that way, without being crunchy when re-heated.

Cinnamon/cardamom is the traditional flavoring for kheer, but that might make your rice taste too much like dessert. A little mild curry might work better.
