[Recipe] Peanut Brittle

It took a little doing, and some advice from online friends (thanks sumobabe!), but I finally managed to make a reasonable (and quite tasty!) batch of peanut brittle. Third time's a charm, right? Those came out pretty well, but I'd be curious as to how they'd be with the cayenne as opposed to the cinnamon.

Happy to help. Oh, and they say there are some pastry chefs who can pretty accurately gauge the stage of cooking sugar just by the color and looking at the bubbles.
