[Recipe] Helen's Sausage-Stuffed French Bread

Being home and not feeling too well, I returned to old habits and decided to make myself some comfort food. I paged through Emeril's Potluck until I came across something that looked tasty (and that I had most of the ingredients for), on page 55: ( Helen's Sausage-Stuffed French Bread. )

We made a sausage dip this week that you might like. You take one pound of bulk breakfast sausage and crumble it up in a pan. Brown it completely, breaking it up as much as possible. Without draining, add an 8 ounce block of cream cheese. Let the cream cheese melt. Then add 2 cans of Rotel tomatoes (tomatoes with green chiles), one can with liquid, one can drained. Warm through and serve. This would great in your hollowed out bread, or just served with hearty crackers.

Suggestion: use your leftover filling as topping for plain toast, or with pasta.

Good thought. I was planning to use it also as dip for tortilla chips.
