After paying rent and important bills (plus buying the ever-more-costly groceries), I had been in a slightly nervous state of lowered finances. I think I ended up using a heaping half-teaspoonful of that minced ginger that comes in a glass jar -- you know, the Spice World kind that we mentioned in passing last Friday? I just didn't feel like peeling and dicing up fresh ginger.

(I picked up the Spice World stuff at that Market Basket in Salem, the one that used to be a DeMoula's.)

Yeah, that ginger in a jar stuff is pretty good and SO much easier than dealing with the fresh kind.

Re-heating that delicous sounding meal will cure the 'bit too pink' issue. Sounds great and where you heading by Toronto in your great northern escape?

As a matter of fact, I was! Well, in theory. I'm plotting to head west through New York and cut up into Canada right around Toronto, then head north-ish towards Cochrane. I have this nebulous idea in mind to take the Polar Bear Express up towards Moose Factory (the town at the southernmost tip of Hudson Bay). I was thinking I'd stay a night there, train back down the next day, and then drive east-ish towards Montreal and Quebec and into New Brunswick. The final leg will be down Nova Scotia into Maine and back into Massachusetts. : )

It may be a bit ambitious for eight or nine days, but hey, I drove across the continental U.S. in five. I'm pretty sure I can do this as well. *grin*
