Actually, rinsed cottage cheese works great. You want to wash out as much of the salt and such as you can, but there are many women in the church where I grew up that make it with that rather than making the curd themselves and it's a pretty close match. Curd from the cheese shop I'm guessing would be much bigger than you would as I suspect it's for made fried cheese curds etc.

I may have to go to the Cheese store and see if the have curd for sale..I have NO faith in my own ability to make it LOL. but the rest I could do.
