I recorded my Naveril's Blessing song as a track for Adeon, to help him learn it. I wound up just using FourTrack, on my iPhone - it wasn't super-special, but it was easy and got the job done.
I've been looking for something that translates singing to sheet music, though. I've tried two packages so far, and neither worked well.
I've just recently picked up Garage Band on the iPad which comes with 16 track recording capabilities. Combined with the recommended hardware, I'm ready to go beyond a couple of tutorial videos and actually start practicing it.
I've usually worked in reverse. On my computer, I've been using Finale since 1993. It's fantastic transcription software and it will make mp3 files (e.g. - http://www.dillia.net/larp/raulincountersummoning.html) but I have never been able to create vocal tracks with words, which is frustrating, so I've decided to put the effort into just doing it.
Finale will in theory take any instrument it hears and turn it into sheet music, but I don't know anything that will put the words on it at this point.

I don't need words on the page quite yet - just the sheet music - so this sounds perfect.
