Passover cookies from honey cake mix?

Mar 25, 2009 08:40

A few years ago, I made some Passover choc chip cookies that used a package of honey cake mix.  I think I got the recipe from Kosher by Design, but I'm not sure.  I no longer have the book.  I was thinking of making them again this year; can anyone share the recipe?

If no one beats me to it, I can check kosher by design when I get home. It was in the original book, or the one for pesach?

I'm 90% sure it was the original book. Thank you for volunteering to look!

Wow, I was sitting in the kitchen today pondering life and realised I never looked up that recipe for you! My apologies! Anyway, here it is:

Honey Chocolate Chip Cookies
1 (12 ounce) box Passover honey cake mix
1 tablespoon instant coffee granules
1 cup chopped walnuts
1 large egg
2 tablespoons oil, plus enough orange juice to total 1/2 cup
1 cup chocolate chips

-Preheat oven to 325. Line 2 cookie sheets with parchment paper or lightly grease them.
-In a medium bowl, combine dry cake mix, instant coffee, and walnuts.
-In a separate bowl, mix the egg with the oil/orange juice mixture. Add the dry ingredients into the egg mixture. Stir in the chocolate chips.
-Scoop out the dough by rounded teaspoonfuls onto the prepared cookie sheets. Bake 10-15 minutes. Remove a rack to cool completely.

Thank you so much! We'll have houseguests with a sweet tooth, and these will be very welcome.
