The likeliest reasons for an over-stiff dough are too little liquid, or over-kneading/over-mixing, which develops the gluten and toughens the dough. You could try pre-made wrappers as kmelion suggests, or look for a recipe from a trusted source. Gil Marks rocks my house for Jewish cooking...
Hehe.. I definitely want to try that too. But I just happen to have my fiance's bubbe's recipes to go on, which is why I'm starting with the Eastern European stuff.
