youch! Dear supermarket: Easter season =/ Passover season this year!
the machos look quite yummy, though.
anyway, I would go for [add: salad with] exotic vegetables and cheeses --
some combinations of:
* roasted beets * roasted asparagus if on sale * nuts * cheese! (bleu, chevre, etc.) * lettuce * tomatoes * avocado
you could also stuff small vegetables with some sort of tomato/ricotta mixture and bake. or fill tomatoes with (cooked) spinach, chopped nuts and cream cheese and bake or not bake.
baked potatoes with broccoli and CHEESE
or, if you are not all about the cheese, then there are always actual fish filets (I buy as late as I can and freeze after rinsing) and saute in butter or oil with lemon.
quinoa with peppers and onions?
if you go meat, you can always do the cold-cuts on passover rolls route...
I tend to improvise based on whatever vegetables are on sale wherever I am...
My sons favorite passover sack lunch is thermos "lasagna" for which we layer matzah ( onion Tam Tams are good too) with hot pasta sauce, wilted spinach, and cheese in, you got it, a small thermos. By lunchtime it's all melted together and is hot and yummy.
I would add: home fries, hash browns, salade nicoise minus the green beans. A quick grilled steak or chop with quickly nuked brocs and some boiled potatoes.
My husband's favorite Passover breakfast is cottage cheese with sour cream and maple syrup -- a bit too rich for me!

2) Take tuna fish. Mix it with mayonnaise, dijon mustard and maybe a pinch of wasabi paste. Spread on matzah. Eat.
