I've spent eight weeks as an apprentice, and though I've been asked to stay on for a little bit yet, I've completed the official program of study. At eight weeks, I have a decent understanding of anatomy, different approaches for butchering each animal, and skills and techniques to draw upon as I work. Fuckin' A, as they say. And they're right.

I've seen massive amounts of passion and even bliss in your updates since you made this leap. I've seen it in your posts about baking, brewing, cooking, and pottery. I see it here. Well-earned and richly deserved.

You'll always make mistakes. There will always be a slip of the knife, a nicked left hand, a cut that went poorly. Perfection is impossible to achieve, but if you enjoy the work you'll make it look effortless in time.
