That looks so good. I'm totally saving this. Although I hate tarragon so I won't be adding that! Hahahaha.

I'm sure it'll be fine without the tarragon. Just add a pinch more thyme or something. Other than all the chopping it was easy peasy. I'm going to try albondigas soup tonight!

Don't skip the step about refrigerating the meatballs. It'll make them round if they are in the fridge for a bit. Let me know how you like it!
