I made some lovely pork fillets over the weekend and dusted them with flour and grated parmesan prior to baking - it turned out good. Served them with a nice Italian salad leaf mix with crispy bacon and a dressing of bacon juices, olive oil and balsamic vinegar reduced, salt and pepper - it was yummy!
