Best case scenario is cooking a classical dish with the specific freshly ground masala of freshly roasted whole spices. But if you make up a few of your favorite masalas and keep them in the freezer, a fusion-y braise of meat and vegetables with a good masala and maybe some coconut, coconut milk, cashews, or yoghurt can be a tasty quick meal.
