Almost looks like coif-lady (or is that a bongrace) in the background wants to pour hot tea down somoebody's kirtle.

I'm not sure what it is called. I've been thinking of it as a Flemish hood, as I think that it is similar to a French hood in having a linen coif understructure, with a pressed/flattened linen rectangle pinned on similar to the French hood (just worn more on the head, instead of the black silk that is worn at the back of the head).
