Actual reason for the sudden increase of mango because you're not the only person who has pointed this out recently.
While other prices of fruit have risen, mangoes have actually fallen a bit - this varies in markets, but since I use mangoes in a lot of my cooking I've noticed that it either doesn't go up in price at all, or it's gone down at some stores. Everything else keeps rising, so I tend to add more mango filler than other fruits, and sometimes even veggies. Price saver.
Plus most people buy into the whole "OMG IT'S SO EXOTIC IT HAS MANGO IN IT" idea, and will pay more. Less money for the ingredient, more money for profit, totally why it's a big thing right now.
This does make a lot of sense! I don't know what environs mangoes are more prolifically grown, but I can buy that their crop is probably more stable than some others.
I will never understand this because sausage in and of itself usually is cheap filler by default how much cheaper do you need to go that you have to start branching into polar-opposite-of-meat foods.
additionally i will never know how it even got into our kitchen.
I just get my mother threatening to disown me and being publicly embarrassed, wondering why she takes me anywhere. She acts like the traditional mortified teenage daughter in this scenario.
