I think the answer is because that would be too awesome for any fic to handle.
Or because the she doesn't show up in most quick summaries of FFVII, so the FFVII fandom can't even recall that she existed, and I would assume that a higher percentage of them have played the game than in the KH fandom. (A higher percentage, though not necessarily a high percentage D=)
Well, I think it could go either way... the only Others we see a lot of are Sora and Kairi, and their Nobodies are famously different from the rest, right?
