I like Zemyx and I don't write Zexion as an emo kid. He really IS the opposite of it and I'm TIRED of seeing him written as one constantly.

Zemyx IS a challenge if you're not going by the stereotypes. Which is rare, but I've read it done well.

IMO, Zemyx is not any more than ridiculous than other crack pairings; between something like Zemyx and Riku/Sebastion, the former is obviously less crack-y. It's only not a challenge if one's going to make it that way, doing emo!Zexion + ADHD!Demyx = TROO LUV. Besides, just because it's crack doesn't mean it can't be serious crack. :)

As for your rhetorical question as to who made it up, I definitely don't have the answer but if you go to ff.net and put the character filters to Demyx and Zexion, the first published one is eleventh_end's. :)
