This is a common problem for most shows unfortunately, very few get a proper ending. Networks like to milk a production into the ground till its no longer profitable and then axe it. Its just money to them rather than stories. When they did that to Farscape their was such an uproar they were forced to create a 2 part 3 hour special episode to complete the story. MUHAHAHAHAH... ;)
I've long believed there should be a law stating that producers of series should be required to give the writers notice of the cancellation in time for them to write an ending. Possibly not the most ground breaking law ever dreampt up for society but what the hell. :P
I don't understand their reasoning for cancelling Veronica Mars. Gilmore Girls ended this season and it took up a HUGE amount of their budget. With that cash freed up, they have more than enough money to work with to fund VM. The ratings aren't spectacular, but they can work with that. But instead, they result to the Pussycat Dolls. Pathetic.
