You'll have to tell me how you did the beets in the slow cooker! (I only have one Crockpot, so can't be quite so free with my words.) I put them in foil and bake them like potatoes... and eat them like potatoes, too, so that will be a new one on me!

I'm thinking I'm going to try apple butter in the slow cooker, too!!

I'm going to try apple butter as well.

The beets are wrapped in foil and shoved in the slow cooker. Once cooked, I slice them and hit them with some butter, salt and pepper. Delicious.

So how much time have I spent today deliberating whether I should invest in a medium round crock pot? Maybe too much -- but thanks for the warning about not using a big oval one; you probably kept me from cooking disaster. That pumpkin butter sounds worth it, and of course there are many oatmeal mornings ahead...

The book recommends a small round Crock Pot for most oatmeal recipes, if you want the truth. I used the medium round for the pumpkin butter and for the minestrone and beets. I used the oval one for today's butternut squash soup, and I use it to make (mock) pulled pork per my aunt's recipe, and for several other dishes. The real key is the price of the slow cooker. I found mine at Target on sale, so it was a fairly simple decision.

after trying a small round one that someone gave me, I *splurged* when Target had a medium size one on sale for $15. Well, well, worth it. you want one with a removable inner part (that was the drawback of my freebie) for ease of cleaning.
steel cut oats in the slow cooker? very yum.
