What is McDonalds' secret?

Dean tried to make fries today but they just came out of the chip pan looking like very thin chips. They just weren't anything like McDonalds' ones.

What is the knack?

Part of it is that it's a two-part process - first you boil the potatoes, then slice them, then fry them.

They also tightly control the type and temperature of the oil.

You could well have to experiment a bit.
