This is a nice thing to do with chicken thighs. Breast of chicken can be a little bland and dry so I reely like the luscious tender dark meat of the thighs, full of sinful fat and flavour. Do not laugh because it is obvious what I meant. It is not a sex thing; mixing chicken and sex is almost never a good idea, unless you're a cock.

bellanna and I do something similar with a whole chicken. Get a nice big oven proof pot with a lid, half the lemon and put both halves in the chicken with herbs of choice, and then put the chicken in the pot. Butter up, or use olive oil, the top half of the chicken, and then surround the chicken with the roughly chopped vegetables and potatoes. Pour a glass of white wine over the chicken, followed by a glass of water. Pop on the lid, and in the oven for 1.5 hours. Remove the lid and cook for another 0.5 hours to brown the chicken skin.

I prefer thighs too.

I much prefer thighs as well. Much for flavourful when you get get stuck in. You can rub the skin with olive oil as well if you want them crispy
