An ode to hash browns

It had not occurred to me whole potatoes could be grated until I saw Silas do it one night a few weeks ago. I was awed, and I immediately grasped that potatoes, like cheese, are different when bought whole and when bought shredded and frozen. I don't know about potatoes being better than chocolate--but you make 'em sound damn good. That's going in the recipes memories for sure. And thank you for reminding me that I've been meaning to make latkes again, now that I've pried the cuisinart back away from my mom. It'll be an excellent dinner tomorrow night after my bike ride.

congratulations on your success! yukon golds are the potato cubbie and i swear by (fabulous baked with a bit of oil and some salt), and the beginning with butter might be why we haven't been successful with our hash browns experiences - we keep trying vegetable as the frying base, and they always end up tasting like. . . vegetable oil.

I think the fried potato is one of God's hidden gifts, hidden because we swim in an ocean of bad French fries and potato chips. Congratulations on joining the club that knows better.

My favourite way to have fried potatoes is the Spanish tortilla; to the joyous fried potatoes (sliced, not grated), add fried onions and garlic and 6 eggs. Cook in the same 10" pan you fried the potatoes and onions in (though with only a little oil this time) for 15 minutes, then flip over to get the other side for another 8.

I could eat tortilla forever. Now I'm wondering if I should make fresh French fries today...
