Christmas (or anytime) recipe

I've had a dodgy stomach for a large chunk of this week but yesterday I actually felt better and rather madly decided to bake something. I'm a keen fan of "The Great British Bake Off" but I'm not the best at it myself but these were a) easy, b) tasty and c) seasonal. J wolfed down two in quick succession and even my mother after the first doubtful ( Read more... )

These look good and easy. My mother in law makes a great mincemeat every other Christmas season so I'll file this away until I get my jar next year. Cheers!

I'll have to go back and see what happened when somebody (I guess) added just minced meat to this sweet recipe. It couldn't have been pretty...

Fortunately I don't think the person who obviously thought it was minced meat actually made the recipe, but she did sound very confused in her comment so someone did explain the difference. I dread to think what would have happened if she had baked them using mince!

They were good and easy. I used muffin cases for them and they did turn out rather like muffins.

Oh, they look interesting - we have been mince pie testing at work for a few weeks (any old excuse to eat something!) and these might make a nice change from pie. I'm also going to try the mincemeat loaf cake that curiouswombat posted about the other day.

I love mince pies but these were a nice change and as I'm hopeless with pastry also easier!

First of all: poor you! I wish you a speedy recovery. *hugs*

Secondly: these mince pie cakes look delicious. Many thanks for sharing the recipe and the link to the BBC Good Food magazine site, I've been clicking around there for a while now and love it! :D

It's a wonderful site. I use it all the time when I'm stuck for something to cook. You can just search under your main ingredient and it comes up with lots of brilliant suggestions.

I wish you a speedy recovery. *hugs*

Thanks. I didn't feel that great at the beginning of the week but I'm much better now.

They were lovely (and the one I had tonight still was *g*).

I think there's a funny bug going around where you don't feel desperately ill but you don't feel well either. I seem to have recovered now!

Oh - those do look good - I must give them a try.

And yes - minced meat wouldn't quite work so well...

Although the brandy butter sounds good!

I thought that too. That's why I love looking at the comments on that site as some people have far more interesting ideas than the original recipe. I liked the one where the commenter (aided by her child) just mixed the mincemeat in with everything else :)
