I bet caramelized onion would be nice with this. And goat cheese if you're out of gorgonzola.

February or March in the PNW is about the time I get really excited to finally not be limited to those choices, because all the wild green come up now. This time of year is great for cress (Western Little Cress is probably in your yard or garden,) nettles, chickweed, Spring Beauty, Miner's Lettuce, sorrel, dandelions,etc. After a long Winter of preserved foods or imported foods, my body is so ready for the delight of fresh wild greens. My favorite is matzo brie with dandelion buds. Want a recipe?
