Matsu in Westport, or, while it's outside of the area you're asking about, Sakura at 75th and Neiman Road (AKA The Sushi Train) is a "by the plate" place (pick it up off of the train going around the bar) at lunchtime and dinnertime - but they do requests too, and is usually really good.
As far as I can tell, it's a matter of taste - I went to one of the places mentioned above (Wasahi at 72nd and N. Oak) on the recommendation of someone here way back when, and though it was some of the worst restaurant sushi I've had - but apparently others prefer it. So to each their own, I suppose.

Mr le's Sushi 5024 NE Parvin Road. Kansas City, MO 64117 816-454-5112
Sushi comes with extras like soup and ice cream It also has good size plates of Vietnamese food.
Everything is very good there. but the unagi is not as sweet as other places. However The rolls are good, you get 8 piece California roll for 4.50 (has the whole menu here :)
Good price, good food. Very nice guy Mr le, he remember me from last time I came :)
