You can use any beer, including most alcohol-free beers. The beer you use does change the flavor of the bread.

I generally use whatever I have on hand...I particularly like the results when I use Newcastle Brown.

you can use any spices...or none...or add a cup of grated cheese or potato or apple or whatever...

i just posted this variation because it not only tasted good, but it smelled up my apartment something wonderful!
