It's true what you say about picking up skills/impressing people at work quickly; often all you need to do is get your foot in the door and make a big effort from day one to get on a companies radar and have them considering hiring you. While temping/internships can get pretty grisly and repetitive, it's probably worth doing as much of that as you can feasibly afford to.
My friend Suzy is currently doing volunteer work with Fairtrade, and looking to do paid work for them/another NGO, but is finding it a tough nut to crack. However I'm sure she'd be happy to talk to you about it if you wanted to find out more!
