He also must do this very, very quickly, because they turn brown so fast. I wonder if he has them frozen first? (No idea if one can freeze a banana, never tried it!)
Actually, in Japan a froze, chocolate-covered banana is considered a treat. Very tasty. Though I have no idea how a frozen banana would take to being carved.
