Try making this again without the grated apple. Make potato potato pancakes with apple sauce or sauteed apple slices on the side. Without the grated apple they should get crispy enough. That's how Grandma used to do it.

Leaving out the apple might help, but I suspect the secret to 'crispy' is more oil....which is not going to result in a 1 point serving.

I enjoyed my sister-in-law's latkes tonight, and will worry about points tomorrow. [g]

I know this is old but since you linked me to it I feel compelled to comment anyway. We made it completely from scratch. Grated potatoes by hand with three non-jews helping. They made matzah ball soup (from a mix) to go with the meal.

We went all out. Because it was also Friday night, I did shabbas with them too. I lit Hanukkah candles, Shabbas candles, did Kiddush & Hamotzi. They even sat through Birkat Ha'mazon after the meal. It made me happy.

(p.s. The meal didn't suck)
