Niagara is only a couple of hours away from Toronto by bus or train, you could get there and back in a day if you made an early start. Niagara is lovely. We took the bus out of Niagara to Toronto, it was quite reasonable, though that was quite a few years back. In Toronto The CN tower is good unless you don't do heights. The underground city was quite interesting to wander round. We just went round lots of little bookshops. I liked Toronto but could never put my finger on quite why. Have fun!
Apparently it's very cold there in the winter and the whole city operates down there, doctors, dentists, shops etc. I know we walked through it from the hotel out to the CN tower. Niagara is gorgeous, have a fab time!
If you have a chance, hit Robson street in Vancouver. It's a great place for random shopping, and reasonably inexpensive. Downtown is lovely, and there are a mix of big restaurants and small food places like Subway.
