Sure! Of course, I thought about bringing in my pie book today but then I decided there wasn't really a point. So, I'll have to copy it tonight or tomorrow. :)

Ingredients:

Pastry for 9” Double Crust Pie
1 C good local honey, plus extra for drizzling over the top crust
2 Tbsp grated peeled fresh ginger
3 Tbsp unsalted butter
3 lbs tart, crisp apples
3 Tbsp all-purpose flour
3 Tbsp fresh squeezed lemon juice
1 Tbsp lemon zest
1 Tbsp finely chopped candied ginger
½ tsp ground ginger
Pinch cayenne
Pinch salt

Roll out the pastry and line a 9” pie tin with the bottom crust. Roll out the remaining dough for the top crust. Rechill the pastry until the filling is ready ( ... )
