Sauerkraut History Quest

I've been trying to document how sauerkraut was preserved in the 16th century.  Common sense says that it may be the same as is done today, but that information hasn't been forthcoming to my searches.  I'm going to start to collect references to its manufacture and storage.  One of the challenges is that the 16th century words may not be the modern ( Read more... )

I've had the same issue when going through English and Italian recipes. Even something as simple as the word Lent can be spelled twenty different ways.

This is an awesome project! Kraut with vinegar or mustard sounds pretty good too. I wonder is those were whole cabbages (I've seen pictures of fermented whole heads, but never tried it) or our typical shredded kind?...

Middle French words such as escharpe become echarpe in Modern French. The English word is scarf.

Esquirel becomes equirrel. English = squirrel.

Composte becomes compote.

Etc.

I thought this gem from a French professor in college (that I actually remembered) might be useful.
