My personal stance is that it is the job of the host to ensure that there is something for everyone at any gathering they organize. This doesn't necessarily mean there must be meat for carnivorous guests, but here's the secret, and be careful, the governments might not like this secret getting around:
Use communication
Talk to the peopel you invite and find out what they will and will not eat. I love meat myself, but I do also love a lot of things that don't have meat like quesadillas. That way you can prepare a list of things to serve that ensures everyone will be fed.
