Is this apartment asshattery week or something? [long story short, I'm looking for a place of my own but the next motherfucker who leaves an unwanted apartment guide on my bed is getting it thrown back at their fucking HEAD]

Parents are a love/hate relationship most of the time. I'm sorry to hear things are hard with them though... Don't really know what to say, but here's a *comf* and a *hug*. Hope things get better.
No kitchen counter space would be a deal breaker for me lol. But you can get around that by a cheap table at Ikea. In my old place, when I didn't have much in the way of space, I'd put all my appliances on the table for doing cooking and whatnot.
yeah the thing with parents, nothings ever good enough. The fact that your dad(mom?) is a carpenter simply gives them something to bitch about when their little girl is moving out. What was there first place like? That's what you outta ask :P; unless they were lucky enough to be spoiled or could afford a better dorm/apartment or whatever.
People gotta start somewhere. As for the family events. I assume your stuff is still at home so there is no 'rush' to get them out besides needing the stuff in your new place. Now that you are a big girl, they need to understand that your life is going to change just as much as theirs are and understand that you can no longer run on their demands. It was pretty rocky between me and my grandparents (they raised me) when I first moved out but things smoothed themselves out. Just tell them you have to get it done; otherwise, you will be sleeping on that carpet ;P
