How does the second recipe taste and is it a very dense bread, being whole wheat? How does the long long rise affect the taste?

The second recipe is definitely not as sweet and the texture is a little more coarse, but it is delicious. We love it. The long long rise doesn't make it sour or anything.

Actually, you should check out Peter Reinhart's books. This one came from the Whole Grain Baking book, or something. We have it. You can borrow it if you want. Or come over and look through and we can copy a few recipes!

I'd like to try these. Is there any difference in how they come out? i.e. taste, texture etc.?

Yeah. The second one does have a coarser texture, but it's really good. Also a little less sweet. Honestly, if you and cryingbaby want to try some without making it, I can make some soon and share it!
