Today's looking pretty good so far! I woke up a bit early and was actually feeling energetic (rare for me in the mornings), and since the weather is absolutely gorgeous (it was actually cold when I got up), I decided to bake. Deal. Here it is:

You need a a cucumber, a small pineapple, a mango, two shallots, four cloves or garlic, four red chillies, vegetable oil, a tablespoonful of cane sugar, 2 tablespoonful of fish sauce, four tablespoonful of lime juice, salt and (fresh) coriander.

Wash, peel, core and cut up all fruits and cucumber and put them into a bowl.

Peel and cut garlic and shallots. Fry them in hot vegetable oil until they're soft and sweet. Add chillies, finally add cane sugar and fry, stir well until sugar has caramelised.

Pour into mixer with fish sauce and blend. Let mixture cool down for a bit.

Mix with lime juice and add to the salad. Mix well, let salad steep for a while, add fresh coriander and serve.

For those who like shrimps you can also add a handful of dried shrimps.

Goes very well with teryaki, saté sticks or just any grilled meat.
