That sounds SO good, but the last time I ate lentils (in soup) I was sick like I'd been in a third world country in a water chugging contest. I'm scared now!

No lie, I could have eaten myself into a coma on this stuff. SO GOOD. I had a dilemma this morning trying to decide if I should bring some for lunch, or get Greek food (spinach pie and grape leaves) at the Farmer's Market. I opted for the Greek food, but I can't wait to have some for dinner!

Oh, and I'm sure you could reduce the butter if you wanted to make it a little lighter...or use light olive oil for the sauteeing if you wanted to make it vegan. And it's so pretty when it's done...red lentils, with the almost-raw green pepper (which doesn't get cooked too much since you're tossing it in at the end) for texture and color contrast. Not a bad WW meal!
