Oatmeal Cookies

I felt like baking cookies today and so I made oatmeal cookies which happen to be my favorite cookies to eat. I got the recipe from the Better Homes And Gardens New Cook Book that my Mother gave me a few years ago, but I've made a couple of modifications to the recipe that make it more flavorful I think. Looks good! I use a recipe from the back of an Irish Oatmeal can that is similar - I mix in raisins and unsalted peanuts and call them GORP cookies.

(from the same can)

JAM-OAT SQUARES

1 cup all-purpose flour
One half cup regular oats
1/3 cup packed brown sugar
6 Tablespoons chilled butter
1/4 tsp nutmeg
Cooking Spray
1/4 cup all-fruit preserves

Preheat oven to 350 degrees F
Combine flours, oats, sugar, butter and nutmeg, cut together until mixture resembles coarse meal. Press two thirds of the oat mixture into the bottom of an 8 inch square pan coated with cooking spray. Bake at 350 for 10 minutes. Spread preserves over the warm crust. Sprinkle with additional oat mixture and bake for another 25 minutes until lightly browned and bubbling.
Cool completely in pan on a wire rack. Yield 16 servings.

(well, it's supposed to make 16 servings - I can only get 12 or things get too crumbly)
