First, let me say that as a male I am ***appalled*** at the fiancee. What sort of man leaves a woman in a lurch like THIS?! Yes yes he didn't volunteer to be a father of six. But you didn't really care about her all that much if you abandon her at this point now did you? GAAAAAAAAAAAAAA ok I feel better now...
On the book idea, might try BookCrossing. It's a thingy where people drop off books they've read and log in where they left them... kind of a free floating wall-less library. It probably goes against the spirit of the program to grab them for a family's library but maybe a stopgap until the money appears for books?
Tables and chairs! There's no way she's set up for a family dinner table like this, and the kids are going to need desk(s) to do schoolwork on. And since there are so many boys, a little exercise equipment will go a looooong way. A few balls, bats, an old basketball hoop that can be tacked to a wall...

Oh yes yes of course, it is appalling. But my little silver lining points out "At least she found out now instead of later." That says a lot about what type of person he is.
I'll check the BookCrossing thing out, but I don't have huge hopes for finding a ton of kids books that way. We'll see...
That's a very good point. Most newlyweds are looking at a dinnette or breakfast nook, not a table for 8. I'll mention that and see if we can't get some room measurements, start searching for that. After all, we have no idea of the apartment's demensions... just "two-bedroom". :-/ And I know balls and bats and etc was included in the sentiments for toys, we'll just have to find a few people with more sports in their background to help donate those.
GS = Girl Scout. So you can imagine what force that will have. :)
Scouting power! Awesome... and as long as the GS are involved, don't forget the BS too. If they aren't Cub Scouts, a bunch of them *could* be (the oldest is ready for a regular troop or Webelos, which is the transition year), and the structure might be really helpful to them.
I second whishastar on the computer issue. I didn't put it the first time because I thought "oh, but the aunt will surely have one of her own". Then I thought about the fights that might happen when seven people all want to use one internet connection o.O

Hmm...the sad thing? The first thing that came to mind about the "what else can you/we do to help?" was that show that Ty (from Trading Spaces) is now doing where they completely rebuild a house for people in tough situations. *is a geek* But sadly, I'm sure there's a long wait period, even if they did get chosen. Plus, they don't actually have a house

Sounds great what you are doing for this lady, does she live down in the vallet somewhere? I know the "AZ Grobanites" are always willing to help out people. So tell me where in AZ she lives and I'll fill them in our her situation, see what I can do... in the very least we can round up some books. :D I suppose I could just have them send the stuff to you?
She does live in the valley, yes. I'm not sure more specific than that, but I would be happy to gather stuff here. Send anyone with interest to me, and we'll set up either meeting somewhere or arrange to have them/me swing by. Especially if books? Shipping adds up fast. Of course we are happy to get packages too, if thats easier. Anything anyone can add would be lovely, thanks so much for helping spread the word!
I am here via awbryan. Though the freecycle communities do not like people posting a lot of WANTEDs, they may be able to help in your friend's situation. Find the closest, large freecycle community and start trolling their yahoo group and/or post a WANTED entry for your mom's friend.
Basically, the purpose of freecycle is to keep things out of the dump by giving them to other people that can use them. You can find the lists for the communities here.
