Do a google search for "Brown Rimmed Cookies" they are some of the easiest cookies ever to make and work really well with the GF flour :) Though they have TONS of butter in them. I have the recipe if you can't find it (I think it is in a 80s 'bake off' book or a Australian's Womens Weekly cook book from the 80s).
I don't actually make cookies often so I can't think of any others, I tend to make brownies and friands and mudcakes :)
Brown-rimmed cookies, eh? I will have to check them out! Sometimes recipes from old magazines really turn out to be wonderful classics. A lot of our Christmas cookie recipes are from magazines from way back when... sometimes we even save the clippings! I found in our recipe book a coupon for Pay 'n' Save (which later became Payless, now it's Rite Aid... dunno if you have that store where you are). The coupon expired in 1989, though... LOL!
I made a biiiig batch of GF flour yesterday so I didn't have to measure out 3-4 different kinds for each cookie. Phew!
I know what brownies are, but what are friands and mudcakes? Must expand repertoire!
