I got a mac recently (Late October/Early November) and it was so wonderful and strange. I kind of putzed around a lot (installing apps? Something I was unable to figure out how to do properly until I googled it). This page is supposedly kind of helpful, but I would take it all with a grain of salt. I'm not a fan of Safari, I still use Firefox and they are clearly huge Safari fans.
me: How do I remove icons from my dock? Michael: Hold down the mouse button and it will bring up a menu, and then you can delete. me: cool :D how do I put stuff in it? Michael: Drag an icon to it. me: *shakes head* that's what the problem with this mac business is! That's so simple I never would have figured it out. Michael: There it is, in a nutshell.
You can also just click and lift icons from the dock, and they'll disappear in a puff of smoke.
Pretty much everything in Mac is drag and drop to move things, with all sorts of modifier keys to do different things (Option+ drag and drop will create a copy, Control click on something to get a Contextual Menu, etc.)
I cannot recommend 'OS X for Dummies' enough. That'll teach you everything you need to know.
