Gin is extremely well connected. He's got Aizen's spy network to call on whenever he wants to know something, and he's a terrible stickybeak at the best of times. If you come to his attention, then expect him to have dug up something on you by the next time you meet

As for Edgeworth, most of what's in his bio is fair game. While Gin wouldn't know about the nightmares, his phobia, or other personal issues, he'd know the basics of his history: he was the son of pirate captain, who was murdered after suspicious circumstances. Shortly after that, he became von Karma's protege, and now he has all sorts of shady rumors surrounding him.

*Gin would know about how...fervent Edgeworth's hatred for pirates is. Many of the rumors that surround him revolve around just how far he'll go to bring pirates down, and just what might happen to a pirate unfortunate enough to be caught by the Victoria II. Many of the stories are highly exaggerated, but there's still a grain of truth to them~ Also, since Gin was at the ball, it's noteworthy that Edgeworth did not mingle very much with most of the guests.
*I looked at Gin's profile, and I realized that he and Edgeworth would probably have some overlap while they were at the academy. Would you like to flesh this out?

Ahem, anyways! I approve of that wholeheartedly. Gin would have quickly gotten on Edgeworth's nerves - he's creepy enough without the taunting, but that would only make things worse. After all, how can he train to be the perfect officer when Gin keeps rubbing that in? And you're right about Edgeworth hating the label; however, unlike Gin, his coping mechanism would be to ignore it, excel in school, and subtly rub his success in the face of all those bastards who thought ill of him.
Also, something I forgot to mention earlier: as part of the Bonus Pack of Highly Suspicious Rumors, the first mate before Edgeworth died under fishy circumstances. Granted, he wasn't actually involved in this, and that particular rumor could be caused by sour grapes. But it's something Gin may have heard of.
