I slice up a couple of onions to slip inside the bird. (After I remove the surprise bag) I also slide my hand between the skin and the brest meat seperating the two. I slide gobs of butter and onions in there. I rub the outside with butter, salt and pepper and bake. I will spoon up butter from the pan and pour it over the bird every 30 mins to and hour til done. Never had a bad bird this way...we even stuffed one last year by taking out the inside onions 30 minutes before the bird was done and placing the stuffing inside. (also note we remove all the onions before eating the bird. Don't know for sure but when I was taught to cook turkey this way they told me the onions would be inedible.
