I actually haven't seen "Spice and Wolf", but quite a few people have recommended it to me. So one vote for the series!

Kimi ni Todoke moves a bit slow in its pacing, but it is beautiful and makes almost every action within the show meaningful. Both miakamouse and I are watching it and enjoying. Not to mention updates are promptly posted every Wednesday!

CRAP. WHAT DO YOU MEAN I HAVE TO CHOOSE BETWEEN FATE/STAY NIGHT AND SPICE AND WOLF. XD

More seriously and less fangirly, I highly recommend both of those series. Spice and Wolf is very well-done, if you don't mind that it isn't one of those "ACTION!" series. It's a little slower paced, and focuses more on character development and world-building than action. The soundtrack is also fantastic

On the other hand, I would really recommend taking Fate/stay night with a grain of salt. It isn't the most faithful adaptation of its source material, but still very good if you go in without any expectations. (Personally, I'm only recommending it because I am an awful Tohsaka fangirl think it is a pretty good series for the uninitiated.)

That, and those are the only two on the list I'm actually familiar with.
