generally, the oberlin computer store gives the biggest discounts that they can, which is usually a good bit more than apple's direct educational discount (I would need more info about the machine they are offering at that price, ie ram and processor, to determine whether that is still true in this case)
unfortunately, apple has been decreasing their educational discounts across the board lately.

i was more wondering for large universities that have a much larger endowment and more money to spend on these things (i tried to look on the NYU website, but i would have needed an NYU id to get into it to actually see the price, but the website hinted that the discount was very large). Oberlin's extra educational discount is really only 10 dollars less than the educational discount apple offers at the store for the same computer.

If you're looking for a laptop that isn't ridiculously expensive, look non-Mac.

but i use photoshop a lot, and i am much more comfortable with the system, and i appreciate how it never freezes and crashes on me.

Uh, Windows doesn't crash and freeze on me either, and I have Photoshop as well as several other (better) art programs on my computer.

I think Mac's still the way to go. I far prefer them to windows. Keep looking, I'm sure someone can help!
