Disaster was narrowly averted today when, after much searching and problem-solving, I decided I didn't need to jailbreak my iphone after all. I just wanted to know if it was syncing text files that I composed on the phone, and if I could edit them on the computer. Apparently at one point this was impossible! I hate to ask, but what if you don't use mail.app ... ? Do you think it syncs somewhere in iTunes or whatever imap email system (gmail) is involved?

If you don't use mail.app, then the solution is to use mail.app. srsly. It says it syncs with outlook on windows, and mail.app on the mac, and that's it.

Although, since it stores the notes in a (kind of?) standard format, I wonder if you could configure a different mail reader to open the mbox file that's in mail.app's Library directory.
