When I had to give up all things gluten, I was in despair. I couldn't find anything that tasted the *same* as the wheat stuff I loved. And I'd try and try and try, and always be disappointed. And then, after being almost 3 years totally GF, a couple of weeks ago I picked up some rice pasta, and realized I couldn't remember what wheat pasta tasted like, and I didn't miss it anymore.
I hope this happens for you sooner than 3 years, lol, and good for you for making this change for your health! I'm seriously considering going ovo-lacto again. (I can't give up dairy. I would die. Well, maybe not DIE...)

The one dish I had to find the vegan alternative to was enchiladas probably.
