I think, if I lived in my own perfect world, I'd bake something at least every two to three days. Depending on time, energy level and other obligations, I might even bake every day. Or cook every day. But, I would have to say I get much more enjoyment out of baking than I do cooking. I'm not sure what that's about exactly. I think, in this ( Read more... )

Ah, bread. I can't eat it. Or rather, I eat it with penalties. (MY knees hurt for a week after eating some decent amount of wheat.)

I've made bread before, however, and I brew beer, both using yeast. I've had pretty good success, and I think the trick is to empathize with the yeast. They like moisture and warmth (yeast are people too!).

The other thing...my workplace routinely orders more bananas than they use. Would you be able to make use of multiple bunches of brown bananas? I don't have any now, but I suspect I could get them free or cheap.

A big problem with yeast is ambient temperature. I noticed you stated a couple posts back that your place is cold. Yeast breads won't rise well in a cold room. Try turning your oven on at about 250 and putting the raising dough on TOP of the stove so it stays warm & cover the bowl w/ a damp tea towel, that might help.

I totally failed at yeast breads until I got a bread maker- I use it on the dough setting to raise the dough, then xfer it to pans for things like dinner rolls and such.

I did try the Betty Crocker 'make a tent' trick. Bowl of dough set on a wire rack above a second bowl of hot/steamy water - both tented with tea towels. But, it might still have been too cold in my place.

A bread machine would be great - and it's on the list - I'm just a little more than broke at the moment.

I'm not sure the bread hook is your issue. I don't believe in machine mixing bread and have had fine luck. It sounds like your place might be too cold or maybe your yeast was old? Sometimes it's old even when you buy it fresh. I do prefer cake yeast to dried. That's getting hard to find.

I think you and Call Girl are right, my place is too cold. I'll try again sometime, and perhaps I'll have better luck.
